CAULIFLOWER BOWL
Ingredients (4 people)
  • 1 cauliflower
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 4 teaspoons olive or sunflower oil
  • 400 g white beans
  • 1 teaspoon mustard
  • 1 teaspoon cider vinegar
  • 1/2 lemon juice
  • 1 tablespoon oat milk
  • 1 or 2 garlic cloves
  • 20 g pine nuts
  • 10 g flat parsley
  • 4 pita breads
  • thyme
  • rosemary
  • salt
  • pepper
Step 1

Preheat oven to 250°C.
Toast pine nuts briefly. Set aside.

Step 2

Clean and chop parsley. Set aside.
Drain and rinse white beans. Set aside.
Place cauliflower on board, trim greens and cauliflower stalks and set aside.

Step 3

Cut the cauliflower florets and place them on a baking tray with turmeric, cumin, a little oil and a little salt and pepper. Stir to coat the cauliflower florets with the spices.
Cut cauliflower stems into small pieces. Place stems and leaves separately on a separate baking sheet. Sprinkle with remaining oil and season with salt.

Place the 2 baking sheets in the oven and roast for 10 minutes.

Step 4

After 10 minutes, remove the tray with the stems and leaves. Leave the tray with the florets and continue baking for 10 to 15 minutes to obtain a golden color.

Step 5

Make a purée of the stems: Pour the white beans into a blender and add the cauliflower stems, mustard, cider vinegar, rosemary and thyme, lemon juice, oat milk, garlic and a little salt. Blend to a smooth purée.

Step 6

Ladle the purée into bowls and arrange the roasted florets and roasted leaves on top.
Sprinkle with pine nuts before serving.
Serve with slices of pita bread.

BANANA BREAD
Ingredients (4 people)
  • 2 very ripe bananas
  • 120 g flour
  • 10 g baking soda
  • 30 g walnut kernels
  • 1,5 tablespoon maple syrup
  • 10 g brown sugar
  • 2 eggs
  • 80 g plain yogurt
Step 1

Preheat oven to 180°C.
Chop walnuts briefly. Mix flour with baking powder and chopped walnuts.

Step 2

Peel the (very) ripe bananas, break into pieces and place in the mixer.
Add the maple syrup, brown sugar, yoghurt and eggs.
Blend to form a thick banana paste.

Step 3

Mix this dough with the flour mixture in a mixer.

Step 4

Pour the smooth mixture into a cake tin.
Bake the banana bread in a preheated oven for 35 to 40 minutes.

Step 5

Prick banana bread with a needle to check doneness.
Leave to cool, then cut into slices or chunks.

CHOCOLATE MOUSSE
Ingredients (4 people)
  • 80 g chocolate
  • 1 can chickpeas
  • 20 g sugar
  • sesame seeds for decoration
Step 1

Toast the sesame seeds in the pan.

Step 2

Let the can of chickpeas cool (in the fridge).
Melt the chocolate “au bain-marie”.

Step 3

Drain the chickpeas and KEEP THE LIQUID (aquafaba).

Step 4

Whisk the liquid of the chickpeas together with the sugar for a long time into thick foam.

Step 5

Gently mix the whipped liquid from the chickpeas with the lukewarm melted chocolate.

Step 6

Portion and allow to cool for at least 3h.
Finish with a few toasted sesame seeds.

TIP: Use the chickpeas for the hummus recipe below!

HUMMUS
Ingredients (4 people)
  • 200 g drained chickpeas (1 can)
  • 8 cl water
  • 1/2 vegetable broth cube
  • 1 tablespoon olive or sunflower oil
  • 1 teaspoon sesame seed oil
  • pepper
Step 1

Mix the chickpeas. Add the vegetable broth and continue mixing to obtain a smooth and homogeneous mass.

Step 2

Add the oil and seasoning and continue mixing.

Step 3

Cool it down in the fridge if you want it fresh. Enjoy!

BODDING
Ingredients (4 people)
  • 3 croissants (leftovers)
  • 100 g sugar
  • 25 cl semi-skimmed milk
  • 3 egg yolks
  • 1/2 vanilla sugar sachet (4 g)
  • 5 cl cream
  • 20 g raisins
Step 1

Use leftover croissants. Tear the croissants into pieces and place in a bowl.

Step 2

Mix milk and sugar, vanilla sugar and lightly heat mixture until sugar dissolves. Remove from heat.

Step 3

Add the cream and egg yolks and mix.

Step 4

Pour this mixture over the torn croissants.
Leave to rest for a while.

Step 5

Mix the mixture and croissants well. If the mixture is too solid, add more milk, cream and eggs (proportions 1/2 milk, 1/4 cream and 1/4 eggs).
Add raisins.

Step 6

Fill the container with the mixture. Bake in a preheated oven (180°C) for about 45 minutes.
Leave to cool and serve.
